Why does Linux only see 256 MB of RAM?

It's the default setting in VirtualBox. You can change it by launching Portable-VirtualBox.exe rather than Virtualize_This_Key.exe. Then change the amount of RAM in the virtual machine's preferences. The maximum amount of memory you can give to your Linux depends on how much free memory you have.
